Fruit and Vegetable Guide
BlueberriesSummer Description: These are round berries with a firm, smooth skin. Similar round berries include saskatoons, elderberries, gooseberries, and currants. Selection: Look for firm, plump, richly-colored berries with no soft spots or discolorations. All berries should be dry with no mold or signs of juice leaking on the container. They will not ripen after picking. Storage and handling: Blueberries will last up to 10 days, covered, in the refrigerator as long as they are kept dry. Just before using, wash and drain well. Preparation: Remove any stems. Use in recipes as desired. Serving suggestions: Raw blueberries are delicious plain or added to smoothies. Eat any of these berries in baked goods muffins, pies (SIS, p. 156), cobblers, and crisps. Use in jellies and jams or on top of cereal. Elderberry flowers can be added to salads or batter-dipped and fried like fritters. Nutrients: Vitamins C and K; anthocyanin antioxidants; fiber. 1 lb raw = 2 cups More from our readersDo you have a tip, comment or recipe you would like to add to this page?
